It’s the perfect summer pie – refreshing and fruity strawberries paired with a soft and airy sponge cake base.
The fact that’s low carb and sugar-free is just the *strawberry* on top (forgive the cheesy pun).

Ingredients

Ingredients for the sponge cake crust:

g erythritol Erythritol is a natural alternative to sugar that even has some health benefits.

vanilla bean You can also use vanilla extract in exchange.
1 tsp = 1/2 bean

 tsp baking powder
pinch of salt
 tbsp butter to grease your pie dish

Ingredients for the strawberry topping:

g fresh strawberries
ml water
g powdered erythritol
packet clear cake glaze
oz fresh strawberries
fl oz water
oz powdered erythritol
packet clear cake glaze
oz fresh strawberries
cup water
tbsp powdered erythritol
packet clear cake glaze

Step 1

Preheat your oven to 350°F/180°C.

Step 2 – Preparing the sponge cake crust

  g erythritol, eggs, vanilla bean

Scrape out the vanilla bean and add the vanilla pulp into a big bowl.

Add the eggs and erythritol as well and mix them with a hand mixer or eggbeater until you get a smooth and slightly frothy mass.

Step 3

Add the dry ingredients and mix them well until you get a smooth cake batter.

Step 4

   tbsp butter to grease your pie dish

Grease a 9″ tart pan with a bit of butter.

Step 5

Fill the batter into the tart pan and press it into place to get an even pie crust.

Step 6

Bake the sponge cake crust for about 20 minutes in your preheated oven.

Step 7

Let the crust cool down completely before you start preparing the strawberry topping.

Step 8 – Preparing the strawberry topping

Halve the strawberries and place them on the pie crust until it is fully covered.

Step 9

  ml water, g powdered erythritol, packet clear cake glaze

Prepare the cake glaze according to its’ packaging and pour it over the strawberries. Use the powdered erythritol instead of sugar.

If you can’t find clear glaze you can also make your own one by using 1 tbsp of potato starch instead of one packet of clear glaze.

Mix 1 tbsp of potato starch and 2 tbsp of powdered erythritol in a small pot.
Add 1 cup of water and bring to a boil – let boil for approx. 30-60 seconds.
Pour quickly over the strawberries.

Step 10

Chill the low carb strawberry pie for at least 1 hour before enjoying it.

Storage

Cover the pie with plastic wrap or aluminum foil and store it in your fridge.

We recommend consuming it within 2-3 days.
