Step 1

  oz mascarpone cheese, fl oz heavy cream, oz powdered erythritol, tsp vanilla extract

Add the ingredients into a bigger bowl and beat with a hand mixer or whisk until you get a smooth and fluffy mass.

Step 2

Add the chocolate and instant coffee to a small bowl and pour a little bit of boiling water over it.

Stir until you get a smooth mass.

You may want to chop the chocolate into smaller pieces before pouring the water over it – this way it will dissolve more easily.

Step 3

Pour the chocolate-coffee-mixture into the bowl with the mascarpone and beat again briefly until everything is mixed.

Step 4

Fill the mousse into a small jar and let it chill in your fridge for at least 30 minutes before enjoying it.

Storage

Cover the jar with plastic wrap or a lid and store it in your fridge.

The mousse will be good for at least 3-4 days.
