With only 3g net carbs per serving it is perfect for anyone who follows a low carb or keto diet and thanks to the chia seeds this pudding also contains a lot of fiber!

Ingredients

ml half & half
ml water
g chia seeds
g erythritol Erythritol is a natural alternative to sugar that even has some health benefits.

1 tsp = 1/2 bean
fl oz half & half
fl oz water
oz chia seeds

Step 1

  ml half & half, ml water, g chia seeds, g erythritol, tsp vanilla extract

  fl oz half & half, fl oz water, oz chia seeds, oz erythritol, tsp vanilla extract

  cup half & half, cup water, tbsp chia seeds, tbsp erythritol, tsp vanilla extract

Add all ingredients to a small jar and mix right away.

Let the jar sit for about two minutes before stirring again.

Step 2

Wait another five minutes before stirring again.

Make sure there are no clumps of chia seeds at the bottom or the edge of the jar and that everything is evenly distributed.

Step 3

Place the jar in your refrigerator for at least 30 minutes.

Step 4

After the 30 minutes are over, you can take your keto chia pudding out of your fridge.
Give it a good stir one last time and enjoy it!

You can also leave it in the fridge for a longer period of time and eat it later – but you should still stir the pudding once more at the 30-minute mark.

Storage

Cover the keto vanilla chia pudding with plastic wrap or a matching lid for your jar and store it in your fridge.

The pudding will keep fresh in the refrigerator for 4-5 days.
