Step 1

Scrape out the vanilla bean and add the vanilla pulp to a big bowl.

Add the other ingredients and mix them with an eggbeater.

Add the eggs as well and mix them again with an eggbeater until you get a smooth mass.

Add the dry ingredients into a separate bowl and mix them well.

Step 4

Add the dry ingredients into the bowl with the chocolate-egg-mixture and knead with your hands until you get a smooth dough.

Preheat your oven to 350°F/180°C.

Form the dough into about equally sized balls and place them on a baking tray lined with parchment paper.

Press the balls down using the palm of your hand to create the “crinkles”.

Step 7

Bake the cookies for about 7-8 minutes in your preheated oven.

Every oven is different, that’s why the baking time in your oven might vary a bit from ours.

Keep an eye on the cookies, as almond flour tends to burn a bit faster than regular all-purpose wheat flour.

Step 8

Let the cookies cool down for about 10 minutes before you roll them in a bit of powdered erythritol.

Step 9

Continue to let the cookies cool down until they’re completely cold before enjoying them with a hot cup of tea or coffee.

Storage

Store the low carb chocolate crinkle cookies in a suitable container – a cookie jar for example.

Consume them within 2 weeks.
