oz sugar-free chocolate
tbsp unsweetened baking cacao powder
vanilla bean You can also use vanilla extract in exchange.
1 tsp = 1/2 bean

pinch of salt
powdered erythritol

Step 1

Preheat your oven to 350°F/180°C.

Step 2

Use a large kitchen knife to chop the chocolate into small chunks.

Step 3

g chopped almonds, g defatted almond flour, g erythritol, g unsweetened baking cacao powder, vanilla bean, pinch of salt

oz chopped almonds, oz defatted almond flour, oz erythritol, oz unsweetened baking cacao powder, vanilla bean, pinch of salt

cup chopped almonds, cup defatted almond flour, cup erythritol, tbsp unsweetened baking cacao powder, vanilla bean, pinch of salt

Scrape out the vanilla bean and add the vanilla pulp into a big bowl.

Add the other dry ingredients into the same bowl and mix well.

Step 4

  g soft butter

  oz soft butter

  cup soft butter

Add the butter into the bowl as well and knead until you get a smooth dough.

Add the chopped chocolate into the bowl and knead quickly until the chocolate is evenly distributed through the dough.

Step 5

Form about equally sized balls and place them on a baking tray lined with parchment paper.

The balls should be about 1.2-1.6″ or 3-4cm.

Step 6

Bake the cookies for about 10-12 minutes in your preheated oven.

Every oven is different, that’s why the baking time in your oven might vary a bit from ours.

Keep an eye on the cookies, as almond flour tends to burn a bit faster than regular all-purpose wheat flour.

Step 7

Let the cookies cool down for about 10 minutes before you roll them in a bit of powdered erythritol.

Step 8

Continue to let the cookies cool down until they’re completely cold before enjoying them with a hot cup of tea or coffee.

Storage

Store the low carb chocolate snowball cookies in a suitable container – a cookie jar for example.

Consume them within 2 weeks.
