Low carb side dishes, which are intended to replace high carb classics such as rice or mashed potatoes, tend to sound great but taste mediocre at best.

Not so this keto cauliflower puree with only 4g net carbs per serving!

This low carb “mashed potatoes” alternative actually lives up to its promise – it’s just as comforting, super creamy, and absolutely delicious!

Ingredients

g (frozen) cauliflower
ml heavy cream
tsp salt
tsp pepper
tsp nutmeg
oz (frozen) cauliflower
fl oz heavy cream
tsp salt
tsp pepper
tsp nutmeg
oz (frozen) cauliflower
cup heavy cream
tsp salt
tsp pepper
tsp nutmeg

Step 1

  g (frozen) cauliflower, ml heavy cream

  oz (frozen) cauliflower, fl oz heavy cream

  oz (frozen) cauliflower, cup heavy cream

Add the frozen cauliflower into a bigger pot and pour the cream into the pot as well.

If you’re using fresh cauliflower for this recipe, remove the leaves and stem and cut it into large chunks before adding it into the pot.

Step 2

Let the cauliflower simmer at medium heat for about 30-40 minutes.
Stir every 5-10 minutes.

If you’re using fresh cauliflower, you should add about cup of water ( fl oz / ml) in addition to the cream.

Your cauliflower is done when it has broken down completely and ideally you shouldn’t be able to make out whole florets anymore.

Step 3

Remove the pot from the stove and add the spices.

Puree the cauliflower for about 2-3 minutes using an immersion blender.

At that point, your cauliflower purée should look super creamy and you shouldn’t be able to see any chunks. If you are still able to make out chunks, puree it a bit longer.

The cauliflower puree tastes best when it is as creamy as possible, that’s why it’s better to blend it a little longer rather than too short.

Step 4

Serve your keto cauliflower puree as a side dish to a meal of your choice and use it to replace mashed potatoes in any recipe.

Storage

Fill the cauliflower puree into a suitable air-tight container or cover it with plastic wrap and store it in your fridge, where it will keep for at least 4-5 days.
