This Christmas cookie recipe is a holiday classic – simple butter cookies.

But our butter cookies are a bit special: they are low carb and keto-friendly as well with only 0.3g net carbs per cookie!

Ingredients

The correct ratio of ingredients is very important for this recipe, that's why we recommend using a kitchen scale and the oz/g measurements instead of cups.

g defatted almond flour Make sure that your almond flour is defatted in order to get the best results.

Step 1

  oz defatted almond flour, oz soft butter, oz erythritol, vanilla bean

  cup defatted almond flour, cup soft butter, cup erythritol, vanilla bean

Scrape out the vanilla bean and add the vanilla pulp into a big bowl.

Add the remaining ingredients as well and knead with your hands until you get a smooth dough.

Step 2

Wrap the dough with plastic wrap and let it chill in the fridge for about 30 minutes.

Step 3

Preheat the oven to 350°F/180°C once the 30 minutes are over and take the dough out of the fridge.

Step 4

Place the dough between two sheets of parchment paper and roll it out until it’s about 0.2″/5mm thick.
Use Christmas-themed cookie cutters to cut out the cookies.

Repeat this process until no dough is left.

Step 5

Place the butter cookies on a baking tray lined with parchment paper.

Use a cake lifter or knife to transfer the cookies without braking them.

Step 6

Bake the cookies for about 7 minutes in your preheated oven.

Every oven is different, that’s why the baking time in your oven might vary a bit from ours.

Keep an eye on the cookies, as almond flour tends to burn a bit faster than regular all-purpose wheat flour.

Step 7

Let the cookies cool down completely before enjoying them with a hot cup of coffee or tea.

By the way, it’s completely normal if the cookies seem a bit “mushy” when they’re fresh out of the oven.
They’ll harden up once they cool down.

Storage

Store the low carb butter cookies in a cookie jar or another suitable container.

The cookies will be good for up to 2 weeks.
