We used almond butter made from blanched almonds, hence the light color of our cookies.
If you use almond butter made from whole almonds, your cookies will be darker but will taste the same.
Make sure the cookies aren’t laying too close to each other, as they may spread a bit in the oven.
There should be at least 0.8″/2cm space between each cookie.
