g erythritol Erythritol is a natural alternative to sugar that even has some health benefits.

tbsp creamy sugar-free peanut butter Make sure that there is no added sugar in your peanut butter.

Step 1

Melt the chocolate using a double boiler or in your microwave.

Step 2

Take cupcake liners and add about 2 tsp of chocolate into each one.

Place the cupcake liners into your fridge and let them chill for about 10-15 minutes or until the chocolate hardened up.

Step 3

Mix the peanut butter and erythritol.

Step 4

Distribute the peanut butter filling evenly among the cupcake liners.

Step 5

Distribute the remaining melted chocolate as well (about 1 tbsp of chocolate for each liner).

Step 6

Place the cupcake liners back in your fridge and let them chill for another 10-15 minutes or until the chocolate hardened up.

Storage

Cover the low carb peanut butter cups with plastic wrap or place them in an air-tight container and store them in your fridge.

There they’ll be good for about 2 weeks.

Keep in mind that the chocolate will get quite hard if it’s cold.

That’s why we recommend taking the peanut butter cups out of your fridge at least 20-30 minutes prior to eating.
